IDYLL FARMS STORY
We own/manage some 8 truffiere from Malmesbury to Ballarat, so are experts on how the soil affects truffle colour, taste and aroma. We get calls from exporters of truffle to explain why, say, Australian Perigord truffle differs from Oregon, French or Italian grown Perigord (tuber melanosporum). The principles are the same as in vineyards.
As pioneers (since 2001) of the French Perigord truffle in Victoria (our family comes from near Perigeaux, the home of the Perigord), we hold the Victorian Truffles Festival since 2010, we produce the only ‘real’ or ‘pure’ truffle oil in Australia, are the only truffle nursery in this region, were the first in Australia to use Truffles Tastings 101 as an education vehicle to teach chefs and gourmet cooks how to cook truffle.
As farmers who inoculate and infect our own trees, we really do understand what a truffle is, how it grows, how it matures, how it ripens, etc. We therefore know more about the truffle and how it behaves under cooking conditions than most, and in the near future are likely to teach students at the Cordon Bleu School about why knowledge about the truffle is so important in cooking with it, matching with wines. Australia is the fourth largest truffle producer in the world.
TRUFFLE BERRY FARMS STORY
In Victoria in 2001 with our French heritage and horticulture knowledge we took up the challenge of truffle. We promote truffle as inexpensive ($1.50 per gram) You need 2 grams per plate for dishes. Truffles are easy to cook with once you know how. We focus on bringing this great delight to the discerning Australian public, looking to support cool climate wineries and farmers, promoting fresh, local, seasonal produce as best for cooking and enjoying with truffle, a cold climate food.
WE HAVE MOVED IN DIRECTIONS
We produced the first Truffle Cookbook in Australia in 2010 (80 recipes), we are currently the only ones doing regional wine matching by recipe, the first to sell truffle online, the only ones now who sell by the gram, by grade, by flavour and aroma.
Our big success this year has been the production of a real, pure truffle oil to compete with the fake truffle oil, (99.9% of truffle oil sold globally, probably 99.99% of truffle oil sold in Australia). This has been the result of 5 years of R&D, and we know only of one other in the world, an Italian company.
