ROASTED CARROT & FENNEL SOUP
As a farewell to winter we have decided to share a delicious soup that is warm and comforting with the deep flavours of roasted carrot and fennel. Fennel is still in abundance and this Roasted Carrot and Fennel Soup is an easy preparation that will see you through the last of the winter days into spring.
Fresh fennel should have a fragrant aroma, smelling subtly of licorice or anise. People are usually fans of fennel or not, there' no middle ground. Fennel is usually available from autumn through early spring. The subtle flavour of fennel perfectly compliments the sweet carrots.
The combination of carrots and fennel in soup has been a regular on our menu since early June, we have even made it without roasting the vegetables, which was lovely but roasting them really took it to another level. If you are a fan of roasted vegetables, you will appreciate the earthy flavours in this simple soup. To that end I always ensure the fennel and onions are quite (really) brown, but the level of roasting is up to your desired tastes. Enjoy.
